Chicken Basquaise with Red Rice
The weather has been unforgivably hot lately, so today’s rain was very much welcomed. Making use of leftovers was always a challenge in our house: unused cream, a single lemon, or even yesterday’s dinner. We had some peppers left in the fridge from our Shakshuka breakfast, and N found the perfect recipe to make use of them.
Taking inspiration from one of our favourite food bloggers Manger (whom I love love love love love a lot), our take of Chicken Basquaise was leftover galore. Certain ingredients were replaced with whatever goodies we could make use of. Ham made way for bacon, and our stash of paprika was used instead of piment d’Espelette. I’m not even sure if we are actually making the traditional Basque dish any more, but the end result was still satisfying for a warming lunch on a wet day.
